Soft Molasses Cake (Cake with a Kick) 1
This week is retro week in our house! Everything that’s old is new again. So in honor of retro week I decided to make my grandmother’s Soft Molasses Cake. This is cake with a kick! So delicious and easy and the combination of ginger, cinnamon and molasses really spices it up. I’ve added a wonderful chocolate icing to bring some sweetness to the spice. So, so good!!

Soft Molasses Cake
1/2 cup sugar
1 cup Molasses
1 egg
5 tblsp melted butter
2 cups flour
1 tsp ginger
1tsp cinnamon
1/4 tsp salt
1 cup hot water
1 tsp baking soda
Grease and flour an 8 x 8 baking pan.
Mix sugar, egg, butter and molasses. Whisk flour, cinnamon,ginger and salt. Fold into molasses mixture. Lastly, add hot water with baking soda dissolved in it. Bake at 350 for 30 minutes until knife comes out clean. While cake is baking make icing:
1 cup heavy cream
8 oz semi sweet chocolate
In microwave, bring cream to a simmer. Pour over chocolate and cover with foil for 10 minutes. Remove foil and whisk until smooth. Refrigerate so icing will firm up(1 hour)
When cake is done baking, let cake sit in pan for 5 minutes, then remove to cool on rack. After icing has firmed up, ice cake liberally. Serve immediately or refrigerate.
