Don’t you just love Bugs Bunny for his famous line, “What’s up Doc?” And if you’ve seen the show, you know that he loves carrots. He will do anything for a bite of his carrot. Well, I always wondered how he would react to carrot halwa. Halwa is a type of Indian sweet or dessert. This type of halwa is made with simple ingredients; the main ingredient being carrots. I bet he would love a bowl of it. In fact, I can just imagine him savoring every last morsel of the halwa and then breaking out into a Bollywood song and dance.
Well, while I ponder about that, why don’t you give this recipe a try. It’s a whole new way to enjoy your favorite vegetable.

1 lb Grated Carrots
½ cup of Condensed Milk
5-6 Sliced Cashews or Almonds
5-6 Raisins
1-2 Cardamom seeds (powdered)
3 tbsp Butter
The best part about making this dessert is that it can be done all in the MICROWAVE. You start off by melting the butter in a large microwaveable container/bowl (for 30-40 seconds). Then add grated carrots, mix them well and microwave for 8-10 minutes (mixing after 5 minutes of cooking). Use a lid to cover the container. Then add condensed milk and cook for another 5-8 minutes until the mixture is cooked well and it all comes together. Next, add the powdered cardamom and mix well and transfer into a serving dish. Lastly, in a small pan, heat ½ tsp of butter and toast the nuts. Then add the raisins and remove from stove. Garnish the halwa with the toasted nuts and raisins. Voilà!
***Quick Tip: The procedure was done with a 1100 watt powered microwave, so please adjust the timing as per your microwave wattage.
