Tonight was a football and pizza kind of night.


I live in the boonies of PA, but I do have a few awesome pizza places to order from. But that’s not what I’m in the mood for. I feel like creating and multitasking. Let’s make pasta sauce for later
Make the Sauce: Take a can of San Marzanno plum tomatoes and heat them up in a pasta pot.
At the same time sauté some onions, peppers and garlic till soft. Take a hand blender- if a smoother tomato sauce is desired- and blend the tomatoes down. Add the onion and pepper mixture to the sauce and simmer, uncovered, for 10 or 15 minutes.
(Just enough to evaporate the amount of moisture you want away.)
Add kosher salt and fresh ground pepper to taste and simmer another 5 mins. Chop up fresh basil and rosemary and add to sauce.
Make the pizzas: Take 3 Thomas’ English Muffins and halve. Put them on a cookie pan and cover each with sauce from the pot bubbling on the stove. Let sit while you chop and grate and slice your approved toppings. Top your muffins and place in a pre-heated 350 degree oven for 10 minutes. Make sure you watch them. In the end broil them for 3 or so minutes and pull from the oven. Cover the sauce and pull off the heat and let the sauce sit. Pour a glass of red wine, put three on a plate and head to the living room. Put the football game on and Voila!

Let’s just hope the Pats play good for mama tonight. It may just be preseason but…
