Mango Salad

So its Mango season in Miami, and seriously, they are everywhere!
Miami is a Cosmopolitan City, but most people have a fruit tree growing on their yard. Mangos, Avocados, Lemons, Limes, Key Limes. My husband is a realtor, and one of the best selling points about a house here in Miami, is how many fruit trees are growing in the back yard.
In the neighborhood where I live, we have alleys, so not only do I benefit from my own plantings, but trolling the alley can provide anything from passion fruit to Cuban Mamonsillos, which are similar to lychee nuts but oh so much better!
I try to troll my alley, in the morning every couple of days, the competition however is fierce, and the fruit may fall anytime, so its all about luck.
But what to do with my treasure trove of Mangos. I make Mangoritas, jam, chutney, but this simple salad is my favorite.
Mango Salad
Ingredients:
1 Ripe Mango ( a variety that is not too fibrous) cut into 1 inch chunks
1/2 cup chunks ( 1/2 inch) Queso Blanco
1 tablespoon chopped Cilantro
2 tablespoons Olive Oil
1 tablespoon of Juice Lime
Salt to taste
Directions:
Peel and cut Mango into 1 inch chunks
Cut Queso Blanco into 1/2 inch chunks
Mix Olive oil, Lime juice, and salt
Pour dressing over Mango and Queso Blanco and toss
Sprinkle with chopped Cilantro
Note: amounts can vary depending on size of Mango.
This is a great simple recipe, after all its summer, its hot, a simple recipe is what I’m all about during this time of year, well actually anytime of year.

Cut Queso Blanco into 1/2 inch chunks
Toss both with dressing and sprinkle chopped cilantro.
Result……delicious easy Mango Salad.
