Orangette’s Butternut Squash and Chickpea Salad with Tahini
January 31, 2008 | By kathryn | 4 Comments
Going through old pictures, just now, I found the picture you see above and smacked my lips at the memory: “Hey!” my brain sang out. “That’s that delicious butternut squash and chickpea salad with tahini you made from Orangette’s website.”
According to the picture, I made this on December 19th. So please follow this link to Orangette’s recipe (it’s an adapted recipe, so lets not give her ALL the credit) and take a picture, date it, and bury it away so you can have the same experience I just had. Then make it again as I plan to make it again quite soon.

That looks so good! I’ll have to try the recipe. I love both squash and chickpeas, but never put the two together.
I’ve generally stayed away from winter squash because I have so much trouble getting them open. Sometimes it seems like you need a hatchet! And I just don’t have one handy. But I’d really like to try this receipe. So tell me, Adam (or anyone) …is there some easy trick to “peeling” the squash, as she instructs?
That’s funny, just the other day, I made Orangette’s
Chickpea Salad (http://orangette.blogspot.com/2007/01/brown-bag-it.html) and it was fantastically delicious for such a simple recipe. You should try it! (I actually liked it so much that i made it again two days later, but got overly enthusiastic with the garlic and parmesan; i mixed the leftovers with some pasta and that was fantastic too!)
this is great- i made it for a dinner party and people adored it.
